Candied Kale Recipe

Though kale was “so last year,” I still have quite a fondness for it, especially when I can make it taste like a treat for the kids. Last summer, I happened to play around with a bunch of kale using some leftover marinade for some salmon. I tweaked it a bit and came up with what I call Candied Kale. Enjoy!

Ingredients

  • 1 bunch of kale (any variety), washed and chopped
  • 1 onion
  • 1 tbsp of olive or coconut oil
  • salt and pepper to taste

For candied glaze

  • 1/4 cup maple syrup
  • 4 tbsp butter, melted
  • 2 tbsp Dijon mustard
  • 1 tsp apple cider vinegar

Directions

Sauté the onion in oil, then add the kale, the salt and the pepper and sauté until just wilted. Set kale aside, off of the heat, and mix together the glaze ingredients. Once mixed, pour the glaze over the kale and gently toss. Put kale back on heat for 1 minute and then serve.
